Elevate arrabiata pasta with olives and herbs.
Ingredients:
  • 375g linguine
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 2 long red chillies, seeded, thinly sliced
  • 2 tsp fresh thyme leaves
  • 44.40 gm tomato paste
  • 520.00 gm Fresh tomato sauce (see related recipe)
  • 63.75 gm chicken style liquid stock
  • 125.00 ml pitted kalamata olives, halved
  • 187.50 ml fresh basil leaves, sliced
  • Shaved parmesan, to serve
  • Fresh baby basil leaves, to serve
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Reserve 1/3 cup of cooking liquid before draining.
  • Heat oil in a large, deep-frying pan over medium-high heat. Add onion and cook for 3 minutes until softened. Stir in garlic, chilli, and thyme, cooking for 2 minutes until fragrant. Add tomato paste and cook for 1 minute. Mix in tomato sauce, stock, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until slightly thickened.
  • Toss pasta, olives, and basil in pan with reserved cooking liquid for 2 minutes until heated through. Serve topped with parmesan and fresh basil.
