Tomato, prawn and haloumi salad

Elevate your fresh prawn and tomato salad with delicious grilled haloumi.
Ingredients:
  • 250g haloumi, thickly sliced
  • 6 roma tomatoes, thinly sliced
  • 500g frozen cooked prawns, thawed
  • 1/2 small red onion, cut into wedges
  • 60g pkt Baby Rocket
  • 62.50 ml trail mix, toasted, coarsely chopped
  • 40g olive
  • 60ml italian salad dressing
Instructions:
  • Preheat a large non-stick frying pan over medium heat. Cook the haloumi for 1-2 minutes on each side until perfectly golden brown.
  • Combine the haloumi, tomato, prawns, onion, and rocket in a large bowl, gently tossing them together.
  • Place the haloumi mixture elegantly on a serving platter and generously sprinkle it with trail mix and olives. Drizzle with dressing and season to perfection.
