Satisfy your craving with this quick and delicious hotpot.
Ingredients:
  • 18.20 gm olive oil
  • 500g extra-lean beef chipolata sausages, halved
  • 2 small brown onions, halved, thinly sliced
  • 3 tomatoes, coarsely chopped
  • 1 green capsicum, halved, deseeded, coarsely chopped
  • 3 garlic cloves, crushed
  • 1 x 405g can Diced Italian Tomatoes (with Basil and Garlic)
  • 250ml (1 cup) water
  • Crusty bread (optional), to serve
Instructions:
  • In a large heavy-based saucepan over medium-high heat, sizzle the oil until shimmering. Cook the sausage and onion, stirring frequently, for about 5 minutes until they develop a beautiful golden-brown color.
  • Combine the chopped tomato, capsicum, and garlic in the pan. Cook for 2 minutes, stirring occasionally.
  • Pour the canned tomato and water into the pan, then crank up the heat. Cover the pan and bring it to a boil. Remove the lid and simmer for 4 minutes until the sauce thickens slightly. Enjoy with crusty bread, if desired.
