Elevate tomato and basil salad with crispy fried chickpeas.
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 1 garlic clove, thinly sliced
  • 500g cherry tomatoes, thickly sliced
  • 1 brown onion shallot, thinly sliced
  • 62.50 ml basil leaves
  • 20.00 ml balsamic glaze
Instructions:
  • In a medium frying pan, heat oil over high heat. Add chickpeas and cook for 5 minutes until golden brown, then add garlic and cook for 2 more minutes until golden. Set aside to cool.
  • Present the tomato, shallot, basil, and chickpea blend elegantly on a serving platter. Drizzle with the luscious balsamic glaze and season to perfection before serving.
