Garden-fresh tomato and olive pasta salad, a delicious side dish to elevate your dining experience.
Ingredients:
  • 200g dried small-shell pasta
  • 1 garlic clove, peeled
  • 56.88 gm extra-virgin olive oil
  • 40.00 ml white balsamic vinegar
  • 40.00 ml finely chopped fresh oregano leaves
  • 250g cherry tomatoes, halved
  • 1 small yellow capsicum, diced
  • 62.50 ml pitted kalamata olives, roughly chopped
Instructions:
  • In a large saucepan, cook the pasta in boiling, salted water according to package instructions until tender. Drain the pasta and finely chop the garlic.
  • In a screw-top jar, combine oil, vinegar, oregano, salt, and pepper. Secure the lid and shake to mix well.
  • Combine pasta, garlic, tomato, capsicum, olives, and oil in a bowl. Toss well and serve.
