Whip up a quick and affordable dinner with only six ingredients!
Ingredients:
  • 350g dried spaghetti
  • 150g salami
  • 300g grape tomatoes, halved
  • 75g baby rocket
  • 200g baby bocconcini cheese, halved
Instructions:
  • Boil pasta in a generously salted large saucepan as per packet instructions until al dente. Save 1/2 cup of the pasta cooking water before draining.
  • Preheat pan over medium heat and cook salami, stirring occasionally, until golden and crispy, about 2 minutes. Remove and place on a paper towel-lined plate.
  • Combine tomato and garlic in a pan and cook, stirring, for 4 to 5 minutes until the tomato has just collapsed. Add pasta, rocket, and reserved liquid. Cook, tossing, for 2 minutes until heated through. Season with pepper and stir in bocconcini before serving.
