Tomato & sausage stew with soft polenta

Family-friendly sausage stew that everyone will enjoy.
Ingredients:
  • 16 (about 500g) beef chipolata sausages
  • 1 brown onion, halved, finely chopped
  • 100g sun-dried tomatoes, thinly sliced
  • 1 x 400g can diced tomatoes
  • 125ml (1/2 cup) red wine
  • 125ml (1/2 cup) water
  • Fresh continental parsley, coarsely chopped, to serve
  • 1L (4 cups) water
  • 750ml (3 cups) Chicken Liquid Stock
  • 340g (2 cups) polenta (cornmeal)
  • 45g (1/2 cup) shredded parmesan
Instructions:
  • In a large frying pan heated over medium-high heat, sear the sausages for 5 minutes until nicely browned. Remove to a plate.
  • Sauté onion and garlic until soft. Stir in sun-dried tomato, diced tomato, wine, and water. Bring to a boil. Add sausages and simmer covered for 20 minutes. Uncover and cook until sauce thickens, about 10 minutes.
  • In a saucepan over high heat, bring the water and stock to a boil. Gently pour in the polenta while stirring constantly until well combined. Reduce heat to low and cook for 10 minutes until thickened. Stir in the parmesan until fully incorporated.
  • Spoon polenta into individual bowls and top with the stew and fresh parsley before serving.
