Sweet and sour chicken with customizable sweetness level.
Ingredients:
  • 18.40 gm vegetable oil
  • 600g chicken thigh fillets, halved
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 2cm piece fresh ginger, finely grated
  • 2 tsp cumin seeds
  • 10.00 gm curry powder
  • 410g can tomato puree
  • 20.00 ml tamarind puree (see notes)
  • 16.00 gm brown sugar
  • 600g broccoli, cut into florets
  • 4 chargrilled roti bread, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat oil. Cook chicken until golden on each side for about 3 minutes. Then, transfer to a plate.
  • Begin by sautéing onion in a pan until softened. Introduce garlic, ginger, cumin, and curry powder, cooking until fragrant. Pour in tomato puree, tamarind, sugar, and 1/2 cup cold water, bringing to a boil. Add the chicken back to the pan and simmer on medium-low heat, covered, for 20 minutes until cooked through.
  • Place broccoli in the pan and cover it while it cooks for about 5 minutes until it becomes tender. Serve the chicken alongside roti and finish by sprinkling with coriander.
