Tomato & vegetable red lentil soup

Vegan-friendly recipe.
Ingredients:
  • Crusty bread, to serve
  • 9.20 gm olive oil
  • 450g pkt soup mix
  • 1 garlic clove, crushed
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 750ml vegetable stock
  • 115g lentils
  • Salt & freshly ground pepper
  • Coriander sprigs, to serve
Instructions:
  • Heat oil in a large saucepan over medium heat. Stir in the soup mix and cook until slightly softened. Add garlic and sauté for 30 seconds.
  • Combine the tomatoes, stock, and lentils in a pot and bring to a boil. Lower the heat to medium-low and simmer uncovered for 15-20 minutes until the lentils are tender. Season generously with salt and pepper.
  • Serve the dish in bowls, garnish with fresh coriander sprigs, and enjoy with some crusty bread.
