Award-winning Tomato Artichoke Appetizers recipe by Karen Haldeman, a prize winner at Ohio State Fair.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/2 cup boiling water
  • 3/4 cup mayonnaise
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon onion juice, if desired
  • 1 jar (7.5 oz) marinated artichokes, chopped
  • 30 thin slices from 4 to 5 plum (Roma) tomatoes
  • Parsley sprigs
Instructions:
  • Preheat the oven to 400°F and prepare a cookie sheet by greasing it. In a medium bowl, mix Bisquick and boiling water, then beat vigorously for 20 strokes. On a work surface dusted with Bisquick, gently roll and coat the dough. Shape it into a ball and knead it 10 times.
  • Roll out the dough to 1/8 inch thickness. Use a 2-inch round cutter dipped in Bisquick mix to cut out rounds. Arrange them about 2 inches apart on a cookie sheet. In a small bowl, thoroughly mix mayonnaise, Parmesan cheese, and onion. Spread 1/2 teaspoon of the mayonnaise mixture on each round. Top with slightly less than 1 teaspoon of artichokes followed by another 1/2 teaspoon of the mayonnaise mixture. Place 1 slice of tomato on each round, then add 1 teaspoon of the mayonnaise mixture on top.
  • Bake until golden brown and puffy, about 10-12 minutes. Sprinkle with fresh parsley before serving warm or at room temperature.
