Cozy up with quick and comforting tomato bocconcini pasta.
Ingredients:
  • 375g penne rigate
  • 400g punnet tomato medley mix
  • 56.88 gm extra-virgin olive oil
  • 2 garlic cloves, crushed
  • 30.00 ml red wine vinegar
  • 2.50 gm caster sugar
  • 250.00 ml fresh basil leaves, torn
  • 180g tub bocconcini cheese, drained, torn
Instructions:
  • Prepare the pasta in a large pot of boiling salted water according to package instructions until al dente, then drain.
  • Cut half of the tomatoes in half. Heat 2 teaspoons of oil in a large, deep frying pan over medium-low heat. Sauté garlic for 1 minute until fragrant. Cook tomatoes for 4 to 5 minutes until starting to collapse. Stir in vinegar, sugar, and remaining oil. Mix well.
  • Combine fresh basil leaves, grated cheese, and cooked pasta into the savory tomato mixture. Gently season with a pinch of salt and pepper, then toss everything together until fully combined. Serve and enjoy the delicious flavors!
