Skewered cherry tomatoes and chicken breast in a sweet and savory sauce, perfect for summer grilling parties.
Ingredients:
  • 3 tablespoons tomato paste
  • 2 tablespoons honey
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chopped fresh rosemary
  • 1.25 pounds skinless, boneless chicken breast, cut into 1-inch cubes
  • 9 ounces cherry tomatoes
  • 4 sprigs fresh rosemary for garnish
Instructions:
  • Immerse 8 wooden skewers in a bowl of cold water for 30 minutes to protect them from burning while cooking.
  • Combine tomato paste, honey, Worcestershire sauce, and rosemary in a large bowl. Mix in chicken pieces until evenly coated.
  • Position the oven rack 6 inches below the heat source and preheat the broiler to medium heat.
  • Skewer the chicken pieces and cherry tomatoes, then place them on a broiler rack.
  • Baste with any extra glaze and broil over high heat, rotating occasionally, until the chicken is fully cooked and the juices run clear, for 8 to 10 minutes. Make sure the internal temperature reaches 165 degrees F (74 degrees C).
  • Place the dish on a serving plate and adorn it with fresh rosemary sprigs.
