Skewered chicken and cherry tomatoes in a flavorful sauce, perfect for a summertime barbecue.
Ingredients:
  • 3 tablespoons tomato paste
  • 2 tablespoons honey
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chopped fresh rosemary
  • 1.25 pounds skinless, boneless chicken breast, cut into 1-inch cubes
  • 9 ounces cherry tomatoes
  • 4 sprigs fresh rosemary for garnish
Instructions:
  • Submerge 8 wooden skewers in a cold water bath for 30 minutes to protect them from burning while cooking.
  • In a large bowl, combine tomato paste, honey, Worcestershire sauce, and rosemary. Mix in chicken pieces until evenly coated.
  • Position the oven rack 6 inches below the heat source and preheat the broiler to medium heat.
  • Skewer the chicken pieces and cherry tomatoes, then place them on a broiler rack.
  • Drizzle any leftover glaze and broil on high heat, turning occasionally, until the chicken is fully cooked and the juices run clear, about 8 to 10 minutes. Check with a thermometer for a reading of 165°F (74°C) near the bone.
  • Serve on a plate and decorate with fresh rosemary sprigs.
