Tomato prawns with polenta

Whip up a quick and delicious meal with just four ingredients for a speedy and satisfying dish.
Ingredients:
  • 1L (4 cups) water
  • 170g (1 cup) instant polenta (cornmeal)
  • 1kg green prawns, peeled leaving tails intact, deveined
  • 1 x 700g btl passata (tomato pasta sauce) (see note)
  • 400g green round beans, trimmed
Instructions:
  • In a saucepan over medium heat, bring water to a boil. Lower the heat and slowly whisk in the polenta until fully mixed. Stir with a wooden spoon for 12-15 mins until the polenta is smooth and creamy.
  • Heat oil in a large frying pan over medium-high heat. Cook prawns for 2 minutes until they change color. Add passata and cook for an additional 2-3 minutes until prawns are fully cooked and sauce is heated through. Season with salt and pepper to taste.
  • Steam the beans over simmering water for 2-3 minutes until they turn bright green and are tender-crisp while the prawns are cooking.
  • Spoon the polenta into serving bowls. Top with the prawn mixture and beans.
