Chill and enhance your favorite Aussie dishes with this zesty tomato relish.
Ingredients:
  • 1.5kg vine-ripened tomatoes, peeled (see notes), chopped
  • 4 onions, chopped
  • 9.60 gm salt
  • 500ml malt vinegar
  • 500g brown sugar
  • 1 tsp chilli powder
  • 40.00 ml plain flour
  • 10.00 gm curry powder
  • 20.00 ml mustard powder
Instructions:
  • In a bowl, combine the tomato and onion, generously sprinkle with salt, and allow to marinate overnight at room temperature.
  • The following day, strain the tomato mixture and transfer it to a pan with 1 cup (250ml) vinegar. Bring it to a boil, then lower the heat and simmer for 30 minutes. Stir in the sugar and chili, then continue simmering for 1 hour, stirring occasionally.
  • Combine flour, curry, and mustard powders with the remaining 1 cup (250ml) vinegar, then transfer to pan. Cook until thickened, approximately 3-4 minutes. Fill sterilized jars with the hot relish.
