Savor the smoky flavor of roasted poblano pepper in this authentic chunky tomato salsa without onions.
Ingredients:
  • 1 poblano pepper
  • 3 cloves garlic, peeled
  • 5 ripe tomatoes
  • 1 cup chopped fresh cilantro
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
Instructions:
  • Turn on the broiler in the oven.
  • Place the poblano pepper and garlic cloves on a medium baking sheet. Broil at the maximum distance from the heat source, turning the pepper frequently until browned, approximately 15 minutes.
  • Combine roasted pepper, roasted garlic, tomatoes, cilantro, cumin, chili powder, and lime juice in a food processor. Pulse until evenly chunky. Refrigerate until ready to serve.
