Curried lentils simmered with garlic, onions, and celery in a flavorful tomato broth. Serves two.
Ingredients:
  • 0.5 cup dry lentils
  • 1 cup water
  • 5 ounces stewed tomatoes
  • 0.125 cup chopped onion
  • 2 stalks celery, chopped, with leaves
  • 0.25 teaspoon curry powder
  • 3 cloves garlic, minced
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Place lentils in a pot with water and bring to a boil.
  • Reduce the heat to low, gently introduce tomatoes, onion, and celery into the pot. Cover and allow it to simmer for 45 minutes. Stir occasionally every 15 minutes, adjusting the liquid by adding water if needed. Sprinkle your preferred spices into the pot during the final 15 minutes. Taste and adjust seasoning before serving.
