Ingredients:
  • 4 eggs
  • 2 tablespoons milk
  • 1/4 teaspoon pepper
  • 2 oz chopped Canadian bacon (1/3 cup)
  • 1/4 cup shredded sharp Cheddar cheese
  • 1 1/2 teaspoons olive oil
  • 1/4 cup chopped shallots or onion
  • 1 1/4 cups fresh spinach leaves, chopped
  • 1/2 cup chopped tomato (about 1 medium)
Instructions:
  • Preheat oven to 400°F. Whisk together eggs, milk, and pepper in a bowl until just blended. Stir in Canadian bacon and cheese, and set aside.
  • In an 8-inch ovenproof nonstick skillet, warm 1 teaspoon of oil over medium heat. Sauté shallots for 1 to 2 minutes until tender. Add 1 cup of spinach and stir until it just starts to wilt.
  • Transfer the egg mixture from the skillet to the oven. Bake for 6 to 8 minutes until the center is set. Allow it to rest for 5 minutes before serving.
  • In a small bowl, mix the remaining 1/4 cup of spinach with the tomatoes and the rest of the olive oil. Serve by cutting the frittata into wedges and topping them with the tomato mixture.
