Homemade creamy Tortellini Alfredo with grilled chicken - a family favorite weeknight dinner.
Ingredients:
  • 2 large skinless, boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 pinch Italian seasoning, or to taste
  • 1 pinch garlic powder, or to taste
  • kosher salt and freshly ground black pepper to taste
  • 1 (12 ounce) package frozen cheese tortellini
  • 0.25 cup butter
  • 1 cup heavy cream
  • 1.25 cups freshly grated Parmesan cheese
  • 2 pinches Italian seasoning, or to taste
  • freshly ground black pepper to taste
Instructions:
  • Get your outdoor grill ready by preheating it to medium-high heat and giving the grate a light coating of oil.
  • Coat chicken pieces evenly with oil, Italian seasoning, garlic powder, salt, and pepper in a bowl.
  • Grill chicken until cooked through and juicy, about 6 minutes per side or until internal temperature reaches 165 degrees F. Let it rest, then cut into bite-sized pieces.
  • As the chicken cooks, boil a large pot of lightly salted water. Add tortellini and cook until they float to the top and the cheese filling is hot, for about 3 minutes. Drain and keep warm.
  • Prepare the sauce by melting butter in a saucepan over medium heat. Cook garlic for 2 to 3 minutes. Pour in cream and cook for 3 minutes. Stir in Parmesan cheese until melted, for 2 to 3 minutes. Add Italian seasoning and pepper, bringing it to a slow boil. Let it simmer for 1 minute before adding tortellini and chicken. Heat through for 2 to 3 minutes.
