Tortellini with pumpkin, feta & oregano

Experience vibrant Italian flavors bursting with fresh herbs and juicy tomatoes in every delicious bite.
Ingredients:
  • 1 x 625g pkt cheese and spinach tortellini
  • 60ml (1/4 cup) olive oil
  • 500g butternut pumpkin, peeled, deseeded, cut into 2cm pieces
  • 250g cherry tomatoes
  • 1 tsp dried oregano
  • 80g feta, crumbled
  • 62.50 ml fresh continental parsley leaves
Instructions:
  • Prepare the tortellini according to the package instructions until it's al dente, then drain and return it to the pan.
  • Heat oil in a large frying pan over medium-high heat. Cook pumpkin until golden and tender, then add tomatoes and oregano and cook until heated through.
  • Combine the pumpkin mixture, feta, and parsley with the tortellini until evenly mixed. Portion the tortellini mixture into individual serving bowls and enjoy.
