Easy, satisfying creamy pasta bake for the whole family.
Ingredients:
  • 1kg butternut pumpkin, peeled, deseeded, chopped
  • 40.00 ml sage leaves, roughly chopped
  • 1 garlic clove, crushed
  • 500g packet tortellini pasta (see note)
  • 252.50 gm cream
  • 250g bocconcini, halved (see note)
  • 82.50 ml grated parmesan cheese
  • small sage leaves, extra, to serve
Instructions:
  • Preheat the oven to 220°C. In a large roasting pan, combine pumpkin, sage, garlic, oil, salt, and pepper. Toss everything together thoroughly. Roast for about 20 minutes or until the pumpkin is tender.
  • Boil pasta in salted water according to package instructions until tender, then drain.
  • In a 5cm deep, 20cm x 30cm (base) ovenproof baking dish, mix pumpkin mixture, cream, bocconcini, parmesan, pasta, salt, and pepper. Bake for 15 minutes until bubbly and golden. Top with additional sage leaves before serving.
