Whip up crispy and savory Chinese scallion pancakes using basic pantry staples for a delicious homemade treat!
Ingredients:
  • 0.5 cup warm water
  • 1 teaspoon white sugar
  • 1 teaspoon yeast
  • 2 cups sifted all-purpose flour, divided
  • 0.5 cup hot water
  • 2.5 tablespoons vegetable oil, divided, or as needed
  • 1 teaspoon salt
  • 2 tablespoons all-purpose flour, or as needed
  • 1 cup finely chopped scallions
Instructions:
  • In a bowl, mix together warm water, sugar, and yeast. Stir in 1 cup of flour using a spatula to form the dough.
  • Combine the remaining 1 cup of flour, hot water, 2 tablespoons of oil, and salt in a bowl until a dough forms. Add the dough from earlier and knead until smooth, shaping into a round ball and dusting with flour as necessary. Place the dough ball on a lightly floured surface, cover with a warm, damp towel, and let rest for 30 to 40 minutes.
  • Divide dough ball in half. Roll out each portion and sprinkle half of the scallions on top. Roll up to form a tube, then cut each in half. Flatten into large pancakes, lightly dusting with flour as needed.
  • In a skillet over medium heat, cook pancakes in the remaining oil until golden brown on each side, for about 3 to 4 minutes per side.
