Indulge in festive homemade eggnog with rich cream, sweet sugar, eggs, and spices. Enjoy it as a boozy delight or a family-friendly treat.
Ingredients:
  • 6 egg yolks (decrease to 4 egg yolks if you would like it less rich)
  • 3/4 cup sugar (decrease to 1/2 cup if you would like it less sweet)
  • 2 cups milk (we use 2% milk)
  • 2 whole cloves
  • Pinch of cinnamon
  • 1 cup heavy cream
  • 1 teaspoon freshly grated nutmeg (lightly packed)
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons each of bourbon and rum, or to taste (can omit for kid-friendly eggnog)
  • 4 egg whites (optional)
Instructions:
  • In a large bowl, whisk or use an electric mixer to beat egg yolks until they lighten in color. Slowly add sugar, beating well after each addition until fluffy.
  • Infuse milk with warming spices: In a sturdy saucepan, combine milk, cloves, and cinnamon. Warm over medium heat until steam rises, avoiding boiling.
  • Gradually combine the eggs with half of the hot milk mixture while whisking continuously. Return the mixture to the saucepan.
  • Cook the eggnog on medium heat, stirring constantly with a wooden spoon, until it thickens slightly and coats the back of the spoon. Use a candy thermometer if available, aiming for 160°F without boiling to prevent curdling. Blend if needed to smooth out any curdled mixture.
  • Take the mixture off the heat and gently fold in the cream.
  • Strain and refrigerate: Pass the mixture through a mesh strainer to eliminate cloves and any curdled parts. Chill for 1 hour.
  • Add the vanilla extract, nutmeg, bourbon, and rum to the mixture. Alternatively, skip the alcohol for a kid-friendly version of eggnog and continue with chilling.
  • For optional whipped egg whites: Beat egg whites with sugar until stiff peaks form. Gently fold into eggnog. For safety, use pasteurized eggs. Reheat mixture over double boiler to 160°F, then cool and chill. Enjoy airy eggnog with a touch of fluffiness retained. Share your feedback below!
