Traditional Indiana Breaded Tenderloin Sandwich

Indiana's iconic breaded pork tenderloin sandwich, served on a Kaiser roll with classic burger toppings, is a must-try state specialty.
Ingredients:
  • 4 (4 ounce) slices of pork tenderloin, cut across the grain
  • 1 large egg, beaten
  • 2 tablespoons milk
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon seasoned salt
  • 0.25 teaspoon dried marjoram
  • 0.25 teaspoon dried oregano
  • 1.5 cups bread crumbs
  • 0.5 cup peanut oil for frying
  • 4 kaiser rolls, split
  • 4 teaspoons mayonnaise, or as needed
  • 4 teaspoons ketchup, or as needed
  • 4 teaspoons prepared yellow mustard, or as needed
  • 4 slices dill pickle
  • 4 slices onion
  • 4 slices tomato
  • 4 leaves lettuce
Instructions:
  • Assemble all the ingredients.
  • Place pork slices between sheets of plastic wrap and gently pound with a meat mallet until 1/4-inch thick and roughly 3 1/2x5 inches in size.
  • In a shallow bowl, combine egg, milk, salt, pepper, garlic powder, onion powder, seasoned salt, marjoram, and oregano and mix until fully blended. In a separate shallow bowl, place bread crumbs.
  • Coat each flattened cutlet in seasoned egg mixture, then in bread crumbs until fully covered. Place the breaded cutlets in a single layer on parchment or waxed paper.
  • In a large skillet, heat the oil until shimmering. Carefully place the cutlets in the skillet and fry until golden brown on each side, approximately 4 minutes. Transfer to paper towels to drain.
  • Position the oven rack 6 inches from the heat source and preheat the broiler. Arrange kaiser rolls, split-sides up, on a baking sheet.
  • Broil in the preheated oven for about 1 minute until beautifully toasted and piping hot.
  • Transfer the golden brown cutlets from the oven onto the bottom halves of the rolls to assemble the scrumptious sandwiches.
  • Layer your favorite toppings in the perfect order: start with a dollop of mayonnaise, followed by a squirt of ketchup, a touch of mustard, a slice of pickle, some onion rings, fresh tomato slices, and crisp lettuce leaves. Finally, crown your sandwich with the top half of the roll and serve immediately.
