Create delectable single-serving pecan pies in jars using premade crust; perfect for gifting or indulging anytime.
Ingredients:
  • 2 cups pecan halves, broken into coarse pieces
  • 1 cup white sugar
  • 0.75 cup light corn syrup
  • 0.75 cup dark corn syrup
  • 4 eggs
  • 0.25 cup butter, melted
  • 1.5 teaspoons vanilla extract
  • 1 pinch salt
  • 8 half pint canning jars with lids and rings
  • cooking spray
  • 2 unbaked 9-inch pie crusts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while generously laying out the pecans on a baking sheet.
  • Place pecans in the oven until they are lightly toasted, about 6 to 8 minutes. Allow them to cool to room temperature before using.
  • In a saucepan, heat sugar, light corn syrup, and dark corn syrup until boiling. Boil for 2 minutes. Remove from heat and let cool for about 10 minutes.
  • In a large bowl, vigorously whisk eggs until frothy. Gradually pour in syrup mixture while whisking non-stop to avoid curdling. Incorporate butter, vanilla extract, and salt with a whisk until batter is velvety smooth.
  • Prepare the small jars by spraying them with cooking spray. Line the jars with pieces of pie crust dough on the bottom and sides. Top with toasted pecans in each jar, followed by spooning in the batter, leaving a 1/4 inch rim at the top.
  • Bake in a hot oven until the top turns golden brown, for approximately 40 minutes. Allow it to cool to room temperature before serving.
