Classic popovers perfect with raspberry butter for a delightful twist.
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 teaspoon salt
  • 1 cup milk
  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons unsalted butter, chilled
Instructions:
  • Preheat your oven to a toasty 425°F (220°C).
  • Prepare a popover pan by coating it with nonstick cooking spray. Place the pan on the center rack of the oven and preheat for 2 minutes.
  • Combine flour, salt, eggs, milk, and melted butter in a blender until smooth like thick cream, for about 1 to 2 minutes.
  • Cut chilled butter into 6 even pieces and place one piece in each cup. Return the pan to the oven until the butter is bubbly, which should take about 1 minute.
  • Fill each cup halfway with batter and bake for 20 minutes. Lower the temperature to 325 degrees F (165 degrees C) and continue baking for an additional 15 to 20 minutes.
