Easy and delightful shortbread recipe for homemade Christmas gifts.
Ingredients:
  • 125g butter, softened
  • 55g caster sugar
  • 150g plain flour
  • 45g rice flour
  • Caster sugar, to dust
Instructions:
  • Beat butter and caster sugar using an electric mixer until pale and creamy. Mix in plain flour and rice flour until dough forms. Shape into a disc.
  • Preheat your oven to 160°C. Line a baking tray with parchment paper, then draw a 20cm circle on the paper before flipping it over.
  • Place the dough on the lined tray, roll it out to a 20cm disc following the paper guide, pinch the edges to create a fluted design using your fingertips, score 8 wedges with a large sharp knife (not all the way through), and prick each wedge twice with a fork.
  • Evenly dust with sugar, then bake for 30 minutes until a light golden hue emerges. Let cool completely on the tray before indulging.
