Ingredients:
  • 257.50 gm milk
  • 252.50 gm Thickened Cream
  • 1 vanilla bean
  • 4 egg yolks
  • 10.00 gm Cornflour
  • 70.95 gm caster sugar
Instructions:
  • In a small saucepan, mix milk and cream together. Split vanilla bean in half lengthwise, scrape out seeds with a sharp knife, and add both bean and seeds to the milk mixture. Heat over medium heat, stirring constantly for 5 minutes until hot (do not boil). Remove from heat.
  • Combine egg yolks, cornflour, and sugar in a heatproof bowl, stirring until smooth. Remove vanilla beans from milk mixture, then slowly pour hot milk over the egg yolk mixture while whisking continuously.
  • Transfer the mixture back to the saucepan. Continuously stir over low heat for 15 to 20 minutes until the custard thickens and coats the back of a metal spoon. Be cautious not to let it boil, to prevent curdling.
  • Enjoy the custard warm or cold over a variety of desserts such as stewed fruit, pancakes, or crumbles.
