Tray-bake fruit mince shortcake

Get festive with these delicious fruit mince shortcakes, perfect for baking with kids and gift giving during the holiday season.
Ingredients:
  • 250g butter, chopped, softened
  • 161.25 gm caster sugar
  • 4.40 gm vanilla essence
  • 375.00 ml plain flour, sifted
  • 65.00 gm rice flour
  • 100g slivered almonds
  • 410g jar fruit mince
  • 1 orange, rind finely grated
  • 37.50 gm pure icing sugar
Instructions:
  • Preheat your oven to 160°C. Grease the base and sides of a 16.5cm x 26cm slab pan with a depth of 3.5cm. Line it with baking paper, making sure to leave a 2cm overhang on both long ends.
  • Cream butter, caster sugar, and vanilla with an electric mixer until pale and creamy. Add plain flour and rice flour, then mix with a wooden spoon until the dough almost comes together. Use your hands to bring the dough together into a ball. Cut the dough in half. Shape one half into an 8cm x 13cm rectangle, wrap in greaseproof paper, and refrigerate. Press the remaining half into the prepared pan base. Bake for 15 to 18 minutes until light golden. Allow to cool for 10 minutes.
  • Preheat the oven to 170°C. Spread almonds on a baking tray and toast for 5 to 8 minutes until golden brown.
  • Mix almonds, fruit mince, and orange zest in a bowl. Evenly spread this mixture over the shortbread base. Roll out the remaining shortbread between 2 sheets of baking paper until it's slightly larger than the pan. Gently place the shortbread over the fruit mixture to cover it completely.
  • Bake the dish for 25-30 minutes until the top is golden and fully cooked. Let it cool in the pan, then lift out the slice. Dust with icing sugar and cut into pieces before serving.
