Berry and apple tray bake

Embrace winter with a cozy picnic and savor this delectable bake as the ideal dessert.
Ingredients:
  • 300ml thickened cream, plus extra to serve
  • 175g unsalted butter, chopped
  • 3 eggs
  • 300g plain flour
  • 220g caster sugar
  • 4.40 gm vanilla extract
  • 3 Granny Smith apples, peeled, cored, thinly sliced, tossed with 2 tbsp lemon juice
  • 300g frozen mixed berries, thawed
  • Icing sugar, to dust
  • Blackberry or strawberry jam, to serve
Instructions:
  • Preheat oven to 180°C. Grease and flour a 32 x 22cm baking dish. Heat cream and butter until just below boiling, then let cool briefly.
  • With electric beaters, whip eggs and sugar until they are pale and thick. Gradually incorporate the cream mixture. Sift in the flour and gently fold it in using a metal spoon. Add vanilla, apples, and berries, then transfer the mixture to a pan. Bake for 40 minutes or until golden and a skewer inserted in the center comes out clean. Bring to the picnic in the pan, and serve with icing sugar, jam, and extra cream.
