Simple creamy rice pudding baked with cream, sugar, and spices, topped with stewed fruit and chopped nuts for a delightful twist.
Ingredients:
  • 55g (1/4 cup) caster sugar
  • 830ml (3 1/3 cups) milk
  • 375ml (1 1/2 cups) pouring cream
  • 8.80 gm vanilla extract
  • 110g (1/2 cup) medium-grain rice, rinsed, drained
  • 2 fresh or dried bay leaves
  • 1.25 gm ground nutmeg
Instructions:
  • Preheat the oven to 150C (130C fan forced) and generously grease a 5cm-deep, 17 x 27cm baking dish with butter before placing it on a baking tray.
  • In a jug, combine sugar, milk, cream, and vanilla. Pour the mixture over the rice in a dish and stir well to combine.
  • Sprinkle the bay leaves and nutmeg over the rice mixture, then bake for 2 hours until the rice is tender with a golden crust. Rest for 15 minutes before serving.
