Succulent drumsticks with zesty chili, lime, and soy marinade.
Ingredients:
  • 60ml soy sauce
  • 1 red chilli, finely chopped
  • 1 lime, zested
  • 21.00 gm lime juice, reserved
  • 57.20 gm honey
  • 8 Chicken Drumsticks
  • 1 lime, extra, sliced
  • 1 bunch buk choy, trimmed, halved
  • 1 bunch baby broccoli, trimmed
  • Sliced red chilli, extra, to serve
  • Toasted sesame seeds, to serve
Instructions:
  • Preheat your oven to 200C while preparing a flavorful blend of soy sauce, chili, lime zest, lime juice, and honey in a handy small jug.
  • Arrange the drumsticks in a baking dish and generously coat them with the flavorful soy sauce mixture. Sprinkle with a touch of pepper and add zesty lime slices on top. Bake in the oven, rotating the drumsticks occasionally, for 40 minutes or until they are perfectly cooked.
  • Blanch buk choy and baby broccoli in boiling water for 2-3 minutes until tender crisp. Shock in cold water, then drain. Mix into the chicken and coat well.
  • Enhance the chicken with a layer of spicy sliced chili and nutty sesame seeds. Pair it with fluffy rice for a satisfying meal.
