Affordable British winter dessert.
Ingredients:
  • 225g plain flour
  • 50g icing sugar
  • 125g unsalted butter, chilled, cut into small cubes
  • 400ml golden syrup
  • 100g fresh white breadcrumbs
  • Zest and juice of 3 lemons
  • Cream, to serve
Instructions:
  • In a food processor, combine flour and icing sugar until mixed. Add butter and blend until fine breadcrumbs form. Mix in egg until smooth pastry ball forms. Chill covered in the fridge for 30 minutes.
  • Preheat the oven to 160°C for the perfect cooking temperature.
  • On a dusted board, flatten the pastry and place it in a buttered 23cm loose-bottomed tart pan. Use the leftover dough to create a lattice design on top by cutting it into strips with a crinkled pastry cutter.
  • Warm up the golden syrup in a pan over low heat, then mix in the rest of the ingredients. Pour the mixture into the tart shell, top with a pastry lattice, and bake for 45 minutes to 1 hour until fully set. Serve with cream.
