Caribbean coconut and fruit bread from Trinidad.
Ingredients:
  • 0.5 pound butter, softened
  • 4.5 cups white sugar
  • 4 eggs, beaten
  • 1 cup evaporated milk
  • 2 teaspoons almond extract
  • 9 cups all-purpose flour
  • 9 tablespoons baking powder
  • 1 teaspoon ground cinnamon
  • 6 cups shredded coconut
  • 1 cup chopped dried mixed fruit
  • 1 cup raisins
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease two 5x9 inch loaf pans.
  • Combine the butter, sugar, eggs, evaporated milk, and almond extract in a blender until smooth.
  • Combine the flour, baking powder, and cinnamon, then mix into the wet ingredients until fully incorporated.
  • Combine shredded coconut, roughly chopped dried fruit, and raisins. Mix thoroughly before transferring the mixture into the greased loaf pans.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean, then cool on a wire rack after removing from pans.
