Cheesy jalapeno poppers with gluten-free bread crumbs - a crowd-pleasing favorite!
Ingredients:
  • 4 green jalapeno peppers
  • 4 red jalapeno peppers
  • 9 ounces soft goat cheese
  • 0.75 cup finely grated Cheddar cheese
  • 0.5 cup finely shredded Monterey Jack cheese
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.25 teaspoon ground coriander
  • 0.25 cup gluten-free bread crumbs
  • 2 tablespoons cotija cheese
  • 1 tablespoon dried Mexican oregano
  • 2 tablespoons fresh thyme leaves
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
  • Slice the jalapenos in half lengthwise and wear disposable gloves to deseed and remove the membranes.
  • Combine goat cheese, Cheddar cheese, Monterey Jack, chili powder, cumin, and coriander until fully mixed. In another bowl, mix bread crumbs, cotija cheese, and oregano.
  • Stuff each jalapeno half generously with the goat cheese mixture. Carefully coat the tops of the stuffed peppers with the bread crumb mixture before placing them on the baking sheet.
  • Roast in the oven until bread crumbs are golden brown, approximately 20 minutes. Top off with sprigs of fresh thyme.
