Triple choc low-fat pavlova

Indulge guilt-free with our delicious low-fat pavlova.
Ingredients:
  • 4 egg whites, at room temperature
  • 215g (1 cup) caster sugar
  • 1 tsp white vinegar
  • 10.00 gm NESTLÉ BAKERS' CHOICE Cocoa, sifted
  • 2 x 220g ctn Extra Light Cream Cheese Spreadable, at room temperature
  • 200g low-fat ricotta
  • 4.40 gm vanilla extract
  • 400g strawberries, hulled, sliced
  • Fresh berries, to serve
  • 10g dark chocolate, finely grated
  • 100g (1/2 cup, firmly packed) brown sugar
  • 20.00 gm NESTLÉ BAKERS' CHOICE Cocoa
  • 7.50 gm cornflour
  • 250ml (1 cup) water
  • 1 star anise, whole (see note)
Instructions:
  • Preheat the oven to 120C/100C fan forced. Line 2 baking trays with baking paper, then mark two 20cm circles on each tray, making sure to place the paper ink-side down.
  • Beat egg white in a clean, dry bowl with electric beaters until firm peaks form. Gradually add caster sugar, 1 tablespoon at a time, beating constantly until sugar dissolves and mixture is thick and glossy. Then, beat in vinegar. Sift half of the cocoa powder over the meringue mixture and fold gently with a large metal spoon to create a swirled effect.
  • Divide mixture among circles and spread meringue evenly using a palette knife. Dust remaining cocoa over the meringue discs using a sieve, then swirl slightly with the palette knife. Bake for 1 hour 40 minutes, swapping trays halfway through, until meringues are crisp and dry. Turn off the oven and let the meringues cool completely inside with the door closed.
  • To make the chocolate sauce, mix brown sugar, cocoa powder, and cornflour in a saucepan. Add water and star anise, stir until fully combined. Cook over low heat for 5 minutes until it boils and thickens. Pour into a bowl and cover the surface with plastic wrap to avoid forming a skin. Let it cool and thicken for 2 hours.
  • Combine cream cheese, ricotta, and vanilla in a bowl and use an electric mixer to whip until smooth and creamy. Refrigerate for 1 hour to chill and thicken.
  • On a serving plate, layer a meringue with half the luscious cream cheese mixture and fresh strawberries. Repeat with another meringue, the rest of the cream cheese mixture, and more strawberries. Finish with a drizzle of decadent chocolate sauce, a sprinkle of berries, and grated chocolate. Serve with extra sauce on the side for a delightful touch.
