Quick and easy holiday chocolates with a delicious blend of melted chocolate and three types of nuts. Great for gifting!
Ingredients:
  • 1/3 cup chopped pecans
  • 1/3 cup slivered almonds
  • 1/3 cup cashew halves and pieces
  • 1/2 packed brown sugar
  • 1/2 cup granulated sugar
  • 1 cup butter or margarine
  • 1/4 cup water
  • 1/2 cup semisweet chocolate chips
Instructions:
  • Preheat oven to 350°F and line a 15x10x1-inch pan with foil. Spread the nuts in the pan and bake for 6 to 10 minutes, stirring occasionally, until they turn light brown. Transfer the nuts to a small bowl and keep aside. Keep the pan with foil for the next step.
  • In a sturdy 2-quart saucepan, combine sugars, butter, and water over medium-high heat for 4 to 6 minutes, stirring continuously with a wooden spoon until it reaches a rolling boil. Continue boiling for 20 to 25 minutes, stirring often, until the candy thermometer reads 300°F, or a small amount dropped into ice water forms a hard brittle strand.
  • Mix in 1/2 cup of nuts, then swiftly transfer the toffee into the same foil-lined pan. Using a rubber spatula, evenly spread the mixture to 1/4-inch thickness. Sprinkle chocolate chips on top and allow them to soften for about a minute. Afterward, spread the softened chocolate smoothly over the toffee and finish off by sprinkling the remaining nuts on top.
  • Chill for approximately 30 minutes until the chocolate sets. Then, break it into pieces and store in an airtight container.
