Tropical banana scones with pineapple juice for the whole family to enjoy.
Ingredients:
  • 0.75 cup chopped banana
  • 0.25 cup pineapple juice
  • 2 cups unbleached all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.375 cup turbinado sugar
  • 0.25 cup butter
  • 0.25 cup coconut oil
  • 2 ounces Greek yogurt
Instructions:
  • In a small bowl, combine chopped banana and pineapple juice, allowing the flavors to meld for 15 to 20 minutes.
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet lined with parchment paper or a silicone liner.
  • Combine flour, baking soda, baking powder, and salt in a small bowl.
  • Cream together sugar, butter, and coconut oil in a large bowl using an electric mixer until smooth; then fold in yogurt.
  • Save the juice from draining the banana chunks for later use. Fold the bananas into the yogurt mixture, then gently fold in the dry ingredients until just combined. Transfer the mixture onto the prepared baking sheet and shape it into a 9- to 10-inch circle. Use a dough scraper or large knife to cut the circle into 8 wedges without separating them.
  • Bake in the preheated oven for about 15 minutes until golden brown and fully cooked. Allow to cool for 5 to 10 minutes before serving.
