Tropical fruits in lime & mint syrup

Ingredients:
  • 107.50 gm caster sugar
  • 125.00 gm water
  • 10 mint leaves
  • 1/2 pawpaw, peeled, chopped
  • 1/2 rockmelon, peeled, chopped
  • 1/2 pineapple, peeled, chopped
  • 1 kg seedless watermelon, rind removed, chopped
  • 131.25 gm fresh lime juice
  • 42.00 gm fresh lemon juice
  • extra mint leaves to serve
Instructions:
  • Combine 1/2 cup of caster sugar and 1/2 cup of water in a saucepan over low heat until sugar is dissolved. Stir in 10 mint leaves. Bring to a boil and simmer for 10 minutes. Remove and discard mint. Allow to cool.
  • Mix together 1/2 pawpaw, peeled and chopped, 1/2 rockmelon, peeled and chopped, 1/2 pineapple, peeled and chopped, and 1 kg seedless watermelon, rind removed and chopped.
  • Mix together the fresh lime juice and fresh lemon juice with the cool mint syrup. Drizzle the mixture over the fruit and chill until cold (up to 2 hours). Garnish with additional mint leaves before serving.
