Tropical seafood cocktail

Impress with a tropical seafood cocktail anytime.
Ingredients:
  • 200ml coconut milk
  • 20.00 ml grated fresh ginger
  • 1 lemongrass stem (pale part only), finely chopped
  • 1 long red chilli, seeds removed, finely chopped
  • 150g thick Greek-style yoghurt
  • 40.00 ml finely chopped mint leaves
  • Zest and juice of 1 lime
  • 300g small cooked prawns, peeled
  • 1 small cooked lobster, halved, meat cut into 2cm cubes
  • 200g fresh crabmeat (see note)
  • 1/4 small iceberg lettuce, shredded
  • Extra mint leaves, to serve
  • Extra lime wedges, to serve
Instructions:
  • Combine coconut milk, ginger, lemongrass, and half of the chili in a saucepan. Bring to a boil over medium heat, then simmer for 2 minutes until thickened. Allow to rest for 30 minutes to infuse flavors, then strain into a bowl pressing down solids. Discard solids and stir in yoghurt, mint, lime zest and juice, and the rest of the chili.
  • Combine the prawns, lobster, and crabmeat with the coconut dressing in a bowl and mix well. Serve by layering the lettuce in 6 chilled serving glasses, topping with the seafood mixture, and garnishing with fresh mint and lime wedges.
