Garlicky shrimp and pasta infused with tropical pineapple juice.
Ingredients:
  • 1 (16 ounce) package linguine pasta
  • 0.5 cup olive oil
  • 0.5 cup pineapple juice
  • 0.5 cup no-pulp orange juice
  • 5 teaspoons grated orange zest
  • 5 teaspoons lemon zest
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 5 cloves garlic, peeled
  • 1 pound medium shrimp - peeled and deveined
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Bring a large pot of salted water to a rolling boil. Add linguine and boil for about 11 minutes until al dente. Drain and serve.
  • As the pasta cooks, blend olive oil, pineapple juice, orange juice, orange zest, lemon zest, salt, pepper, and garlic in a blender until smooth.
  • Heat the sauce in a large skillet over medium-high heat until simmering, then cook for 2 minutes. Stir in the shrimp and parsley, cooking until shrimp are pink and cooked through, for 3 to 5 minutes.
  • After draining the linguini, elegantly transfer it to a serving platter. Generously ladle the shrimp and sauce onto the pasta, then finish it off with a dusting of Parmesan cheese.
