Sautéed Shrimp with Tropical Fruit Salsa

Shrimp with tropical fruit salsa and coconut flakes. Ready in 25 minutes in just one pot!
Ingredients:
  • 1/2 cup sweetened coconut flakes
  • 1 Tbsp cooking oil (coconut oil or canola oil)
  • 1 pound raw shrimp, peeled and deveined
  • 1 mango, peeled and diced
  • 1 cup diced pineapple
  • 2 kiwi-fruit, peeled and diced
  • 1/4 cup finely diced red or sweet onion
  • 1 teaspoon sugar, or to taste
  • 1/4 lime
  • 1/8 – 1/4 teaspoon chili powder
  • Salt and pepper
  • 3 fresh mint leavesthinly sliced
Instructions:
  • Toast coconut flakes: Heat a large frying pan over medium heat, add coconut flakes, and stir until lightly browned. Transfer to a plate to cool and prevent overcooking.
  • Prepare the shrimp: Season with salt and pepper. Reheat the pan over medium-high heat with 1 tablespoon of oil until hot. Sear shrimp for 2 minutes on each side, then transfer to a platter.
  • Sauté the fruit: In the same frying pan over medium-high heat, heat 2 teaspoons of cooking oil until shimmering. Add diced onion and sauté for 1 minute. Add mango, pineapple, and kiwi, cooking for 1 minute until bubbly and softened. Stir in fresh mint, sugar, chili powder, and a pinch of salt. Finish with a light squeeze of lime over the shrimp.
  • Garnish with toasted coconut flakes: Add a finishing touch to the dish by sprinkling toasted coconut flakes over the shrimp and salsa.
