Sautéed shrimp with butter lettuce, avocado, tomatoes, cucumbers, carrots, and dressing.
Ingredients:
  • 1 pound medium shrimp - peeled and deveined
  • 2 tablespoons butter
  • 2 lemons, juiced
  • 2 heads butter lettuce
  • 2 tomatoes, chopped
  • 1 avocado - peeled, pitted and diced
  • 2 stalks celery, chopped
  • 1 cucumber, cleaned and chopped
  • 0.5 cup shredded carrots
  • 0.33333334326744 cup vinaigrette salad dressing
Instructions:
  • Melt butter in a large saute pan over medium heat. Add shrimp and lemon juice, saute until shrimp turn pink. Remove from heat and drain excess liquid.
  • Tear lettuce into bite-size pieces in a large bowl. Add tomatoes, avocado, celery, cucumber, carrots, and cooked shrimp. Toss everything together to combine. Finish by topping with your favorite dressing or vinaigrette.
