Warm, comforting spicy shrimp gumbo over rice - perfect for cozy winter nights.
Ingredients:
  • 0.5 cup vegetable oil
  • 0.5 cup all-purpose flour
  • 1 large onion, chopped
  • 0.5 cup finely chopped celery
  • 0.5 cup sliced green onion
  • 0.5 cup chopped fresh parsley
  • 6 cloves garlic, minced
  • 4 cups chicken broth
  • 0.5 teaspoon ground red chile pepper
  • 2 pounds fresh medium shrimp, peeled and deveined
  • 3 cups hot cooked rice
  • 9 sprigs fresh parsley
Instructions:
  • In a large stockpot over medium heat, cook vegetable oil and flour together, stirring often, until the roux turns a rich, dark brown color, about 10 to 15 minutes.
  • Carefully combine onion, celery, green onion, parsley, and garlic into the hot roux, being mindful of potential splattering. Sauté until onion mixture is tender, around 5 minutes. Add broth and season with salt and red chile pepper. Cover and simmer gumbo until flavors meld, for about 15 minutes.
  • Add the shrimp to the stockpot and cook until they turn pink and opaque, for about 3 to 5 minutes.
  • Divide 1/3 cup of rice among the serving bowls. Spoon shrimp gumbo over the rice and sprinkle with fresh parsley for a delightful finish.
