Indulge in Chef John's irresistible Hawaiian garlic shrimp scampi, a garlicky shrimp delight with a tropical twist!
Ingredients:
  • 1 head garlic
  • 4 tablespoons unsalted butter
  • 1 pound frozen large deveined, shell-on shrimp, thawed
  • 2 tablespoons rice flour
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1.5 teaspoons kosher salt
  • 2 tablespoons olive oil
Instructions:
  • Place garlic cloves in a bowl and cover with another bowl. Shake gently for about 30 seconds until the peels come off easily. Finely chop the peeled cloves.
  • Heat butter in a saute pan over medium heat, add chopped garlic, and cook until golden brown, stirring occasionally, about 2 to 3 minutes. Transfer the garlic-infused butter to a small bowl and set aside.
  • Gently pat the thawed shrimp dry with paper towels, then transfer them to a spacious mixing bowl.
  • In a small bowl, mix together rice flour, paprika, cayenne, and salt. Sprinkle the mixture over the shrimp and toss with a large spoon or spatula until the shrimp are fully coated.
  • In a nonstick skillet over medium-high heat, sear shrimp in a single layer with olive oil until golden and just cooked through, about 2 to 3 minutes each side. Stir in garlic butter and cook for an additional 30 seconds. Repeat with the rest of the shrimp and garlic butter. Serve hot.
