Chocolate dollop on zesty citrus butter cookies.
Ingredients:
  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 2 egg yolks
  • 1 tablespoon grated orange peel
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup dark chocolate chips
  • 2 tablespoons whipping cream
  • 1 tablespoon butter
  • 1 teaspoon light corn syrup
  • Sugared orange peel, if desired
Instructions:
  • Preheat your oven to 350°F and generously grease 2 large cookie sheets.
  • In a large bowl, use an electric mixer to whip 3/4 cup of butter until fluffy. Add 1/2 cup of sugar, egg yolks, vanilla, and orange peel and mix until light and fluffy. In a separate medium bowl, combine flour, baking powder, and salt. Gradually mix the dry ingredients into the butter mixture on low speed until well combined.
  • Form dough into 1 1/4-inch balls, coat the tops with 2 tablespoons of sugar, then space them 2 inches apart on cookie sheets. Press a big indentation in the center of each cookie using your thumb or the end of a wooden spoon.
  • Bake until set, about 12 to 14 minutes. If needed, press down in the center of each cookie with your thumb or the end of a wooden spoon. Allow to cool for 2 minutes, then transfer from the baking sheet to a cooling rack.
  • In a small microwave-safe bowl, heat chocolate chips, cream, and 1 tablespoon of butter on High for 40 seconds. Stir well. Heat and stir in 15-second intervals until smooth. Add corn syrup and mix. Fill each cookie indentation with a generous 1/2 teaspoon of filling. Garnish with a piece of sugared orange peel on top of each cookie.
