Extra crispy wings without the deep fryer - a must try!
Ingredients:
  • Olive oil cooking spray
  • 2kg chicken wings
  • 20.00 gm baking powder
  • 1.80 gm salt
  • 57.20 gm honey
  • 46.80 gm Dijon mustard
  • 39.60 gm whole-egg mayonnaise
Instructions:
  • Cover a sizable baking tray with foil and then set a wire rack on top. Evenly coat the rack with a generous amount of oil spray.
  • Trim each chicken wing into 3 pieces at the joints, removing wing tips. Arrange wings, skin side up, on the prepared tray, ensuring they fit snugly. Chill in the refrigerator for 4 hours or overnight to allow for drying (refer to notes).
  • Preheat the oven to 140C/120C fan-forced with the racks positioned in the upper-middle and lower-middle slots.
  • In a large snap-lock bag, coat wings evenly by adding baking powder and salt. Seal the bag and shake well to ensure even coating. Transfer wings back to the rack over the tray and bake on the lower-middle oven shelf for 30 minutes.
  • Move tray to the upper-middle shelf of the oven and raise the temperature to 240C/220C fan-forced. Bake for 40 to 50 minutes, or until the wings are crispy and deep golden in color.
  • Prepare a delectable honey mustard dipping sauce by blending honey, mustard, and mayonnaise in a bowl, then season to taste.
  • Serve the wings alongside a delicious dipping sauce.
