French-inspired quiche with crispy bacon and creamy Swiss cheese for a truly delightful meal.
Ingredients:
  • 1 cup all-purpose flour
  • 1/3 cup plus 1 tablespoon shortening
  • 2 to 3 tablespoons cold water
  • 8 slices bacon, crisply cooked, crumbled
  • 1 cup shredded Swiss cheese (4 oz)
  • 1/3 cup finely chopped onion
  • 4 eggs
  • 2 cups whipping (heavy) cream or half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • Additional crisply cooked crumbled bacon, if desired
Instructions:
  • Mix flour and 1/2 teaspoon salt in a medium bowl. Cut in shortening using a pastry blender or by pulling 2 table knives through the ingredients until the particles are the size of small peas. Sprinkle with cold water, 1 tablespoon at a time, and toss with a fork until all flour is moistened and the pastry almost leaves the side of the bowl (add 1 to 2 teaspoons more water if needed).
  • Form the pastry into a ball and flatten it into a round shape on a lightly floured surface. Wrap the flattened pastry in plastic wrap and refrigerate for about 45 minutes until firm and cold, but still easy to work with. This step ensures the shortening firms up slightly, resulting in a flakier pastry when baked. If refrigerated for longer, allow the pastry to soften a bit before rolling it out.
  • Preheat oven to 425°F. Roll out pastry on a floured surface with a floured rolling pin into a circle 2 inches larger than a 9-inch quiche dish or glass pie plate. Fold the pastry into fourths, then place it in the dish and unfold, gently press against the bottom and sides.
  • In a pastry-lined quiche dish, layer bacon, cheese, and onion. In a large bowl, lightly beat eggs with a fork or wire whisk. Stir in the rest of the ingredients and pour into the quiche dish.
  • Bake at 375°F for 15 minutes. Lower oven temperature to 300°F and bake for approximately 30 more minutes, or until a knife inserted in the center comes out clean. Sprinkle with extra bacon and allow to rest for 10 minutes before serving.
