Tangy key lime pie ice cream with graham cracker chunks, perfect for any dessert craving - even as popsicles!
Ingredients:
  • 1 (12 fluid ounce) can evaporated milk
  • 2 cups milk
  • 0.66666668653488 cup heavy cream
  • 2 egg yolks, beaten
  • 1 cup lime juice
  • 2 teaspoons lemon extract
  • 1 (3 ounce) package lime flavored Jell-O® mix
  • 6 whole graham crackers
Instructions:
  • Combine evaporated milk, sweetened condensed milk, milk, and heavy cream in a saucepan over low heat. Warm the mixture, whisking frequently. Once hot to the touch, whisk in gelatin mix and sugar until dissolved. Add egg yolks, then remove from heat. Stir in lime juice and lemon extract.
  • Transfer the mixture into an ice cream maker and freeze as per the manufacturer's guidelines. Note: This ice cream may require a slightly longer freezing time for optimal results.
  • Once the ice cream thickens, add large pieces of graham cracker evenly into the canister. They will break into smaller pieces while churning. Mix for an additional 5 minutes. Transfer the mixture into a freezer container, seal it, and freeze until solid. I prefer using 1 gallon resealable freezer bags.
