Tuna, bean and baby spinach salad

Ingredients:
  • 125g green beans, trimmed
  • 36.40 gm olive oil
  • 1/2 tsp chopped thyme
  • 400g can white beans (such as cannellini), rinsed and drained
  • 425g can tuna in oil, drained
  • 80g baby spinach leaves
Instructions:
  • Quickly cook the green beans in boiling water for 2 minutes until tender and vibrant in color. Then, remove, drain, and set aside.
  • Warm the olive oil, lemon juice, and thyme in a small saucepan over low heat for 2 minutes, stirring until well combined.
  • Assemble the white beans, green beans, tuna, and spinach on a platter. Drizzle with the warm dressing before serving.
